Set above the cliffs of Caerfai Bay, half a mile south of St Davids, sits Caerfai Farm. Our 160 acre Coastal Farm has been Organic since 1991 and carries a herd of around 70 cows. We use no artificial fertilisers or pesticides, most of the feed for the cows is grown on the farm – all other feed is sourced from local Organic farms. Our Cheese making production relies heavily on re-newable energy – wind power, ground source heat, solar thermal an anaerobic digester and now photo-voltaic (Electricity). Cheese making started on the farm in 1996 and has evolved steadily over the years. We make three types of cheese using our raw (unpasteurised) milk a medium strength Farmhouse Cheddar, a Caerffili and a Caerffili with leeks and garlic. The Farmhouse Cheddar is traditionally made using vegetarian rennet and matured in our stores for around six months. It has a full nutty flavour. The Caerffili is an artisan Caerffili, a young cheese typically only a few weeks old, it has a lemony yet creamy flavour. Our leek and garlic Caerffili is very versatile, it is a great accompaniment to a ploughmans or as an exciting cooking ingredient.
